The pinto beans are key in the texture of this sauce. I simply pressure cooked them first. Two cups of dry pinto beans with six cups of water at high pressure for 40 minutes made them perfectly tender. You can use canned pinto beans, if you’re so inclined and they will work just as well. Be sure to drain and rinse them before adding to your mixture.
Another important step in getting the right thickness and consistency in this sauce is mashing the pinto beans and ground beef in the beef stock before pressure cooking.

Pressure Cooker Old Fashioned Chili Dog Sauce

- Pressure cooker
Ingredients
- 2 cups cooked pinto beans
- 1 cup beef stock
- 8 oz ground beef
- 1/4 cup tomato paste
- 2 tsp prepared yellow mustard
- 1/2 cup minced onion
- 2 tsp chili powder
- 1 tsp cumin powder
- 1 tsp garlic powder
- 1 tsp white vinegar
- 1 tbsp Worcestershire
- kosher salt to taste
- 2 tsp hot sauce optional
Instructions
- Combine the beans, beef stock and ground beef in the pot of the pressure cooker.
- Use a potato masher to mash the beans and ground beef to a very fine consistency.
- Add the tomato paste, mustard, onion, chili powder, cumin, garlic, vinegar and Worcestershire sauce.
- Place the lid on the pressure cooker and turn to locked position.
- Turn the steam release valve to sealing.
- Press the manual button and adjust the time for 5 minutes.
- When the unit has finished cooking and the timer has counted to zero, carefully release the steam and remove the lid.
- Stir well, taste for seasoning adjustment and add kosher salt as needed.
- Stir in hot sauce if desired.
